Normally, you'd grab those overripe bananas and whip up a classic banana bread, but alas—no bananas in sight. No problem! There’s another option just as comforting and perfect for the season: Shelley’s scone recipe!
We chatted with Shelley, an interior designer and avid home cook, to get her insights on whipping up a delicious fall treat with a recipe that’s perfect for when bananas just aren’t in the picture.

INGREDIENTS

4 cups flour
1 cup sugar
5 teaspoons baking powder
Pinch salt
3 beaten eggs
1 teaspoon vanilla essence
¾ cup milk
¾ cup sour cream
¾ cup canola oil

INSTRUCTIONS

Preheat your oven to 350 - 375°F, depending on how hot your oven runs.

 

Grease cupcake tins or rose silicone molds for 12 scones.

 

In a large bowl, combine all dry ingredients.

 

Make a well in the center and add all the wet ingredients.

 

Mix until just combined—avoid overmixing.

 

If the mixture seems too dry, add a bit more milk.

 

Distribute the batter evenly among the 12 molds.

 

Bake for 20-25 minutes, until golden brown. Check doneness by inserting a knife or stick; it should come out clean.

 

Cool for 10 minutes in the molds before transferring to a cooling rack.
Serve with butter, your favorite jam, and fresh cream.
